Recipe: Potato Souffle


Basic ingredients
 
  • 1 lb potatoes
  • 2 eggs, separated
  • 2 tbls butter
  • peel of 1/2 lemon, grated
  • 3 tbls sugar
  • pinch of salt



  • Preparation:
    • Cook, peel and mash potatoes the day before. Blend well butter, sugar and egg yolks and mix with potatoes. Beat egg whites stiffy and fold in. Add lemon peel and salt. Pour into greased baking dish and bake in 375 oven for 40 minutes.
