Recipe: Venison Fillets


Basic ingredients
 
  • 2 lbs fillet of venison
  • 1/2 cup olive oil
  • 1/4 lb bacon
  • cucumber pickles (sour)
  • salt and pepper
  •  



    Preparation:
    • Cut fillets into steaks, lard with slivers of bacon, season well. Soak in olive oil, turning and then letting stand for a while so that the oil sinks in. Broil under high heat, 15 minutes on each side until well browned and tender. To serve, garnish with sour pickles. Serve with potatoes or Spatzle and cucumberland sauce.
